Asparagus of Canino

They mature before the other asparagus on account of the geo thermal characteristics of the ground. Called 'eat all' for the fact that they can be fully consumed, the asparagus of Canino is a specialty of Tuscia. The introduction of this culture in the community of Canino, must have been a famous agro food industry who some decades ago in their own land, experimented with the asparagus destined for deep freezing, which resulted in being tempted to continue the experiment substituting the initial variety with an asparagus more responsive to the fresh consumer. Actually, the cultivation in Italy is put into effect, above all, in the northern region centres: in Beneto, Emilia Romagna and Piemonte concentrate on almost 70% of the land and 60 % of production.



Old lentils of Onano

The lentil cultivation in the harvesting community boasts of a very ancient tradition and finds mention in the "orders, statutes, municipal laws of the community and people of Onano" of 1561. From then, in addition to representing an economic resource of the zone, it is also judged by series of acknowledgement. The most important one is from a nutritional point of view: its protein content can add upto 30%, it is high in vitamin content, above all, in that of group B, it also has a good iron content. The product, small in size and roundish shape, presents variable colours from dear red grey to reddish ash colour, characterized by a tender skill which when cooked presents good flavour and tenderness.



Coregone fish from the Bolsena Lake

The coregan is a fish of the salmon family, which prefers cold waters. For this reason, the waters of Lake Bolsena is considered very good, and also in the summer, the depth of it's water guarantees low temperatures. The fish, penetrated in the lake, in the beginning of '900, has found it's natural habitat here (also due to the reduction of the predator fisher like the pike), representing today, upto 50% of the fish. It can add up to the length of 8 cms and weight of 4 kgs. It lives 70-80 mtrs deep, and the time to increase is very rapid as compared to other fishes: add 20 cms and attains sexual maturity also in a year.
