Legend or true report of this mine must be in it's name and reputation to an old prelate and it's official steward, the wine bearer Martin. It is said that, during the year 1000 (is one of the few wines that can boast of a date of certain birth), Monsignor Giovanni Defuk traveled following Emperor Enrico V directly to Rome to resolve some Papal controversies. More interested in the Dionecan pleasures than in diplomatic reports, the Bishop proceeded from the devoted Martino with the task to select the better wines of the zone, gradually adding up for the real expedition. Arriving at Montefiadscone Martino did not find sufficient material to write upon. "East!" Near the door of the tavern to indicate the presence of good wine. The signal agreed upon did not do justice to the best of those, which were in principle, simply called "Moscatello". Not having agreed otherwise, he thought of repeating three times East! East!! East!!! Defuk tasted the wine and took away it's sweetness, prolonged the pause for three days, then turning to the end of the imperial mission and remaining with us until death, crowned from the tomb in the local temple of St. Flaviano (his tomb is on the first Chapel to the left) and by custom, perpetuated for some centuries, to turn upside down , each year a barrel of wine on his burial slab. Until now, the wine product on the slopes that rise form the Lake Bolsena, upto the habitation of Montefiascone, were appreciated in the local ambit, praised by travelers, present in the big centers more in the memory and stories for effective commercial existence.
