The Moscato Bianco is the vine making this wine of Chambave so peculiar, the same variety which was brought to Italy from Asia Minor before the Romans, which has been cultivated in many areas dedicated to wine production in several Italian regions.
This DOC wine (name of origin controlled) grows in a territory that stretches along the Dora Baltea river, both on the right and on the left, in the towns of Chambave (small village 20 km East of Aosta and Châtillon, on the right towards Pontey and on the left towards Montjovet, Saint-Vincent, Saint-Denis and Verrayes, at altitudes close to 700-750 metres above sea level. The vintage, between the end of September and the beginning of October, produces the Muscat grapes which are processed in two different ways: when the grapes are immediately pressed and fermented, wine is produced (Valle d'Aosta Chambave Moscato) fresh, aromatic, and ready to be served; when the vintaged bunches of grapes are left to dry for some weeks on grates in the rooms of the cellar, the result is a rich, golden wine with a strong aroma (Valle d'Aosta Chambave Moscato Passito or Flétri), ideal for refined tasting sessions. as for the ripening period, the Valle d'Aosta Chambave Moscato can be sold from December of the vintage year, while the Passito or Flétri have to be kept in the cellar until December of the following year.
The normal Muscat matches with biscuits, dry pastry, shellfish, fish and dishes with eggs; the Passito is ideal with the fois gras, herb cheese and desserts.

The quality of grapes used to produce this wine is the original one, the Prie Bianco, known as Blanc de Morgex.
This vine still has its original features, thanks to the fact that at the end of the 19th century the grapevines where not affected by the vine louse, since this parasite cannot survive in such cold winters.
The vine is produced in the orographic left side of the Dora Baltea, in the towns of Morgex and La Salle, situated in Valdigne, on the Western end of the wine-production area in Valle d'Aosta, in front of the majestic Mont Blanc.here grapevines are grown in terraces with an altitude ranging from 900 metres of the valley line to 1300 metres, the highest grapevines in Europe.
As for the origins of this vine, there are no certain information, just some theories; some people think that the grape was brought in this area by some settlers who came in 1630 from the Vallese or Savoy regions nearby; some others, think that it is the result of the evolution of ancient native vines. The plant certainly adapted itself to the conditions of the area, and it survives in a tough climate, in short time, resulting in an early ripening of the grapes.
